INGREDIENTS
* 3 cups of desiccated or shredded coconut (I like to use half an half to create more texture)
* 2 cups of almonds
* 1 cup of chopped dried apricots
* 3/4 cup of agave syrup (maple works well too)
* 1/2 cup of almond butter
* 1 Tbs vanilla extract
* 2 tsp lemon juice
* A pinch salt
EQUIPMENT
- Blender
- Mixing bowl
- Dehydrator – Optional
- Place the almonds in a blender and grind until fine
- Add all of the ingredients into a bowl and mix well
- Shape the mixture into small bite size pieces
- Place in a dehydrator on the mesh screen and dehydrate for 8 hours
