Banana Ice Cream with Chocolate Peanut Sauce

You  need a food processor. 

Place 6 frozen bananas in the food processor with a little water and blend until creamy. Store in freezer while making the chocolate peanut sauce.

Mix one cup of peanuts, a tablespoon of pure cocoa/chocolate powder, and a spoonful of pure cane sugar in the food processor. (You may need to add a touch of water.) Process until semi creamy/crunchy.


Dish out the frozen banana cream into dishes and spread the chocolate peanut sauce on top and mix it in.


Serves  4-6  as a dessert.

Coconut and Apricot Macaroons

INGREDIENTS
* 3 cups of desiccated or shredded coconut (I like to use half an half to create more texture)
* 2 cups of almonds
* 1 cup of chopped dried apricots
* 3/4 cup of agave syrup (maple works well too)
* 1/2 cup of almond butter
* 1 Tbs vanilla extract
* 2 tsp lemon juice
* A pinch salt
EQUIPMENT
  • Blender
  • Mixing bowl
  • Dehydrator – Optional
INSTRUCTIONS
  • Place the almonds in a blender and grind until fine
  • Add all of the ingredients into a bowl and mix well
  • Shape the mixture into small bite size pieces
  • Place in a dehydrator on the mesh screen and dehydrate for 8 hours
Tip - if you don't have a dehydrator you can put it into the oven on the smallest heat with the door open or just eat it as it is - it's delicious in that way as well!

How to Make Raw Food Vegan Nut Cheese

Measure 1 1/2 cup almonds* and soak overnight in water. 
(you can  use other nuts such as raw cashews, brazil nuts, and macadamia nuts.)


Rinse and drain the almonds.


Blend the almonds with 1 1/2 cups water, 2 tablespoons chickpea miso, 1 teaspoon coconut oil (optional), and the juice from 3 lemons. Blend until smooth using a tamper or you can make it in two separate batches so that it is less work for your blender.


Pour contents of your blender into a bowl and season with a good quality pink or sea salt to taste. You can adjust for tanginess by adding more lemon juice. To make an herbed cheese fold in 3 tablespoons chopped dill (about 5 sprigs) and 2 tablespoons chopped green onion (about 3 green onions green part only). You can also add any combination of herbs and spices that you desire or leave as is.


Pour mixture into a sprout bag and hang over blender carafe, pitcher, or deep bucket. Let hang in the refrigerator to drain at least 12 hrs or longer for a firmer cheese.

Serve on a raw cracker or on crudités.

Nut Cheese


Ingredients:
2 cups cashew
1 tbs finely chopped fresh parsley leaves (you can use your own version)
3 tbs freshly squeezed lemon juice
sea salt
1,5 cup water
Blend everything together into a thick cream

Maca - blueberry pancakes

maca pancakes:
2 cups cashews, soak 4 hours
1/2 cup water
...1/2 cup maple syrup
1 T maca powder
1/4 tsp salt
2 T flax oil
3/4 cup golden flax meal
1/8 cup almond flour

miso honey butter
:
1/2 cup coconut oil
3 tsp chickpea miso (NO SOY- they make a chickpea miso with no soy in it by South River- they also have an adzuki bean miso- haven't tried it yet)
4 tsp honey (use the raw honey that is almost wax like and solid at room temperature)

cinnamon whipped cream
:
1 cup packed coconut meat
1/4 cup coconut oil
1 tsp cinnamon
1 1/2 Tbs yacon syrup
pinch salt

for the pancakes:
Blend all ingredients but the almond flour and flax meal. Pour mixture into a bowl then hand mix in the flax meal and almond flour. Pour a thin layer onto a paraflex sheet (about 1/4 inch thick) on a dehydrator tray and dehydrate 7 hours @ 104 degrees. Flip then dehydrate another 2-3 hours. You want it to be pliable and a little moist, yet firm and in tact.

for the miso honey butter:
Blend all ingredients in a Vitamix until creamy and smooth. Place in refrigerator to chill and firm up.

for the cinnamon whipped cream:
Blend all ingredients with an immersion blender and place in a pastry bag, then put in the refrigerator to chill.

toppings:
dried blueberries (or fresh)
maple syrup

to assemble:
Use a round cookie cutter, the size of your choice to cut out the pancakes. Top with the miso honey butter, cinnamon whipped cream, dried blueberries and maple syrup- decorate to your fancy and share with your friends!

Mix together and add to raw food dishes as a dip or to stews

Pear & Avocado Blend


Ingredients:

2 large pear chopped
1 cup grapes
half avocado
3 tbs honey or 2 tbs agave (can add more if you want)
1-2 tbs lemonjuice


Blend together and put chopped peacans on top and enjoy your raw food diet :)
